No Bake Christmas Cake

(As served at the smallholders show 2001)

• ¼ lb chopped dates
• 6oz Ground Almonds
• 8oz Prunes (soaked )
• 3 pieces of preserved ginger (chopped)
• 6oz seedless raisins
• 2oz candied peel
• 1oz walnuts
• 1oz glace/ cherries
• 1oz sliced angelica
• Rice paper

Method

Mix ingredients in a big bowl, then, blend roughly in a processor.

Line a baking tray base with rice paper (10insx 6ins )

Put blended mix in and press down firmly. Leave overnight in a cool place

Ice and decorate with walnuts , cherries and angelica.
