White Fudge Icing

Ingredients
- 3oz sugar
- 3fl.oz evaporated milk
- 4oz chocolate (white for no bake cake)
- 1 ½ oz butter or margarine
- 2 drops vanilla essence
Method
Combine sugar and evap milk in a heavy pan. Dissolve over a low heat, stirring. When granules have melted, bring mixture to the boil and simmer gently for 6 mins. (supposedly without stirring, but I have never managed this without burning, stir as little as possible)
Remove pan from heat, Stir in butter and vanilla essence. Cool and chill for a couple of hours until it has thickened to a spreadable consistency. I always pour direct from the pan on to the cake.
Keep cake as steady as you can afterwards, as fudge tends to wrinkle.
