Pick 20 heads of Elderflower in hot sunshine, or if you like the fruits later on find flowers which are full pout and the petals and pollen fall off when brushed gently, gather enough that looks like 20 heads. The second method avoids the chance of the bitter taste of the stems getting into the brew.
Put the heads into a large bowl with 2 sliced lemons 2oz citric acid and 3 pints of boiling water then add 6lb of sugar.
Stir until sugar is dissolved and cover
Leave for 5 days, stirring twice daily then strain.
Add 2 crushed Camden tablets or as recommended on the container. Do it in a well ventilated place and allow the fumes to disperse, then put in sterilised bottles, seal and store in a cool dark place. It will keep for 1 year
