Date Squares

Ingredients
- 250gm/8oz Block of Dates
- Grated rind and juice of an Orange
- 120gm/4oz Plain Flour
- 180gm/6oz Porridge Oats
- 180gm/6oz Light Soft Brown Sugar
- 180gm/6oz Butter or Margarine, Melted
Method
Grease a shallow 18cm/7-8in square tin pre-heat the oven to 180C/350F
Cut the dates into cubes and put into a pan with the orange rind. Make the juice up to 300ml/10 fl.oz. with water and add to the pan. Stir over a low heat until the date mixture is thick and soft. Cool.
Mix the flour, oats and sugar together. Add the fat and mix to crumbly texture. Press half this mixture into the tin. Spread the date mixture on top then cover with the rest of the crumble. Press down lightly.
Bake in the pre-heated oven for 30 minutes or until golden brown. Cool in the tin then cut into squares
Makes 16 squares, but larger squares can be served warm with cream or custard as a pudding
