A Perfect Victoria Sponge

To make a perfect Victoria Sponge every time.
Weigh the EGGS in their shells all together, then use that total weight for the rest of the ingredients: –
- Self raising Flour (sieved)
- Sunflower Margarine (must be Sunflower)
- Caster Sugar
- 1 teaspoon of Vanilla Essence (or any other flavour, for chocolate replace 2oz of flour with 2oz of Cocoa Powder.)
Cream margarine and sugar until pale and fluffy add 1 teaspoon of the flour and mix well. Then add beaten eggs, very slowly, add 1 more teaspoon of flour mix well and then add the rest of the egg.
Fold in the rest of the sieved flour and add flavouring. Do not beat FOLD.
If you have 8oz of flour it will make 2 x 8in cakes to sandwich together. (Line tins)
Gas 3 – 4 Moderate oven 325° F or 160° C for about 18 – 20mins. (Adjust for other size cakes)
